This is an incredibly simple & quick paleo bread recipe - perfect for those bread cravings or complement to a worthy Main Course. Although this recipe isn't Whole30© strict paleo, the ingredients technically are so depending on where you are on with your paleo diet eat this sparingly and with a good balanced meal.
At this point, I've bought & tried several paleo breads and I can honestly say I haven't liked any of them enough to eat again or share - until now. My mission has been to find a bread with a lightness & a good, neutral flavor that I can make a sandwich with or toast for a little crunch with a meal (especially breakfast). Mostly the flour has been the issue. Thankfully I've finally found Tapioca Flour (from the Cassava Root) - it has a consistency more similar to white flour and it's cheaper than Almond or Coconut Flour! Also, I've been trying to avoid Almond Flour for three reasons - finding it has too dominant a flavor in most cases, a noticably coarser texture than I prefer and it's an allergen that I try to avoid in case my young kids show an interest in what I've made.
I'm still perfecting the recipe & trying variations but this version is worth sharing & enjoying. I'll work on a larger quantity & baked version next. Stay tuned.

Cook Time: 90 sec -> That's right!!
- 1/3 cup Tapioca Flour
- 1 tablespoon Coconut Flour
- 1/8 teaspoon Baking Soda
- 1/4 teaspoon Creme of Tartar
- 1/8 teaspoon Salt
- 1 Egg, whisked
- 2 and 1/2 tablespoons Coconut Oil (melted/liquid) or Olive Oil - (Pick according to your preferred taste)
- Grease a microwave safe bowl or cup.
- Mix together dry ingredients & wet separately - then incorporate together.
- Pour mixture into bowl.
- Microwave for 90 seconds on high.
- Cool for a few minutes.
- Remove gently and slice.
Honestly you can use any variation of flour here depending on the flavor you desire. Though if you want a toast-able bread I've found that if you use Almond Flour or Coconut Flour as the dominant flour option it get's a little too bitter once browned. Looking for a sweater option?
